Patxi Navarro Special Recipe… Potato Omelette

Patxi Navarro, the World Champion 2009 of Scrabble in Spanish, Duplicates mode, delighted us one of the nights of the weekend in Leon with his:

Cut 4 large potatoes in thinly slices. Finely chop an onion and fried both in plenty of olive oil, adding a pinch of salt. The heat shouldn´t be so high, so the potato will be a bit cooked but mostly almost fried. Beat 4 eggs in a large bowl and add a pinch of salt and some finely chopped parsley leaves. Remove the potatoes and onions and mix everything well. Place a teaspoon of oil in a large skillet and let it warm. Pour the mixture and cook over medium heat.

Other variants may change the onion for one or two zucchini (gives it a very spongy texture) or finely chopped tender garlic. You could also add to the beaten egg a half glass of milk.
